The aim of this study is to investigate whether latitudinal proximity affects the pairing quality of cheese and wine. To do so, we performed a blind experiment with 36 wine-cheese pairings, rated by 10 blind expert judges. The experimental design showing the number of ratings per pairing can be seen in this table:
herve | leerdammer | manchego | munster | roquefort | tetilla | |
---|---|---|---|---|---|---|
alsace | 10 | 10 | 10 | 10 | 10 | 10 |
galicia | 10 | 10 | 10 | 10 | 10 | 10 |
