Screwcap . very light in colour , not unlike some modern rose . a slight orangey cast though not as per age . lovely sweet-fruited aroma and flavour of wild strawberry and a tangy light spice . despite that fruit character , no specious sweetness , and a refreshing sour-cherry finish . the absolute opposite of a big , rich Barossa Shiraz . lightish tannin but perfectly balance with the freshness and tangy finish . utterly drinkable and gv . some might wish for more body but I love it . this vineyard be located in the foothill of the Coastal Mountain Range . double Guyot . 100 % Cabernet Sauvignon plant in 1998 . 4,000 plant per ha . Ungrafted . harvest 10 April . yield be 1.4 kg per plant . abundant volcanic rock and colluvial debris originate from the area 's frequent earthquake . the soil profile include many rock of different size . the vine ' root system be 2.5 metre deep . the percentage of clay vary , but generally exceed 20 % . 2011 be a cooler year than usual . Winter and spring of 2010 experienced 297 mm of rainfall , which be less than average but sufficient to ensure adequate water level for flowering and set . unusual rain in March of 2011 total 23 mm help the grape mature slowly during a colder year . the grape be destemm and then fermented in small tank with natural yeast for 80 day . the only additive use be sulfur dioxide , in very small amount age in 5,000-litre oak barrel - Stockinger , Austria - for 2 year . bottle : 20,000 . ph 3.45 , TA 5.43 g/l . Mid crimson . gorgeous aroma of fresh cassis , a slight cedary herbaceous character , a little leafy , capsicum , cassis leaf but not green . very very fine tannin , with jut a touch of chew at this youthful stage . so refine , define and pure and long . subtle but very long . make you want the next mouthful . from the Breakneck Vineyard , manage by Pannell , with owner the Leskes , since 2008 . design to be pick , fully ripe , at relatively low sugar level . open top concrete fermenter and age in old french oak puncheon for 18 month . blackish crimson . Post fermentation the wine undergo malo in stainless steel away from oxygen . I also think we need to start to develop unique winemaking practice for we region . McLaren Vale have a naturally sweet , rich mouthfeel and mid palate . I need to develop winemaking that control that weight and sweetness , like balance a sauce in cooking . I be try to get more grape tannin in the wine and keep oxygen and new oak out of the wine - technique which be use to enrich the mouthfeel or sweeten the mid palate and bring forward the softness and drink ability of the wine .

Cask sample . this be the amazing plot of vine near moppa north west of Penfolds HQ in Nuri -lrb- oopta -rrb- with trunk one foot across that be plant , ungrafted of course , in the 1880 . I must say it be the most charming Penfolds wine of the modern era I have ever taste . I taste it in May 05 just two week after it have be bottled and transport to London and it look gorgeously untroubled . amazing blackish purple but very , very fresh - opulent but with great old Cabernet 's refreshment factor on the nose -lrb- no , not green -rrb- . there 's real energy here and mass of tannin hidden way , way underneath that beautifully playful array of ancient Cabernet flavour . very long . so well make it could almost be drunk now . ' just ' 13.2 per cent alcohol .

Post fermentation the wine undergo malo in stainless steel away from oxygen . I also think we need to start to develop unique winemaking practice for we region . McLaren Vale have a naturally sweet , rich mouthfeel and mid palate . I need to develop winemaking that control that weight and sweetness , like balance a sauce in cooking . I be try to get more grape tannin in the wine and keep oxygen and new oak out of the wine - technique which be use to enrich the mouthfeel or sweeten the mid palate and bring forward the softness and drink ability of the wine .

I love Monastrell , and I have just taste one that I feel will join the trio of Pie Franco , Estrecho and Alfynal which be my favourite , about which I have write already . this be so new that not only have it not yet be release , but the release date have not yet be decide , the label have not yet be design and the price have not be set . but I love it so much , I find it so elegant and refined , that I fall in love with it immediately . this be grow in the south of inland Valencia , a region call Terres del Alforins , where a few young winery be make exciting wine , try to find they identity , in many case look at traditional method - read amphora - and grape variety such as Monastrell , which be probably the main variety in the region before phylloxera . it be the property of the Velazquez family , unrelated to the great spanish painter as far as I know , Velazquez be quite a common surname in Spain . it be a big estate , with some 130 ha of vineyard . the wine be make by Dominique Roujou de Boubee , a frenchman who be consult and make wine in Valencia , Priorat , Galicia and Extremadura . here he follow the old tradition and use as little technology as possible . the result be stunning . this be still a barrel sample wait to be bottled . bright ruby translucent colour , the colour of the wine from the past . this particular wine have not yet be release , it have not even be bottled , so look out for it in the future if you know someone who sell or import the winery 's wine . the nose scream Monastrell . violet , tree bark , scorch wet earth and black truffle . in the mouth it be also very typical , with the tell-tale elegant rusticity , a apparent contradiction in term , but something that you find in the best authentic , unpraised wine in the world , fine tannin and very fresh . so good now , with a even better future . a legend in the making . -lrb- lg -rrb-
