The models displayed on p. 30 are identical models because the second model was refit based off the number from the first model. This means that the values from the first model was all subtracted by a common value which in this case was the mean. Refitting the model or centering the covariates makes interpretting the analysis easier because it brings the mean to zero which allows for a better understanding of the information. When the mean is turned into zero it is easier to interpret and to look at the values because now the middle value is zero and zero is easier to work with in this example.
