Pancake Recipe from Soul Sync Body

Traditional pancakes are usually made with refined flour and sugar, which have been stripped of some fiber, vitamins, and minerals. Though there is a time and place for those pancakes, this pancake recipe is one that can be incorporated into your weekly meals, especially post-workout with almost 30 grams of high-quality protein. These pancakes can help keep your energy stable versus the usual energy crash we feel after refined carbohydrates.

Ingredients:

  • 1/2 cup of Cottage Cheese
  • 1/2 cup of Oats
  • 2 Eggs
  • 1 tbsp of Maple Syrup
  • 1/4 tsp of Baking Powder
  • 1/2 tsp of Cinnamon
  • 1 tsp of Coconut Oil

Directions

  1. In a blender or food processor, blend the oats to make oat flour.
  2. Add the cottage cheese, eggs, maple syrup, baking powder, and cinnamon to the blender or food processor and blend until well combined. It should be a smooth consistency!
  3. Heat a non-stick pan or griddle over medium heat and add 1 tsp coconut oil.
  4. Pour about 3 tbsp of the batter onto the pan for each pancake.
  5. Cook the pancakes for 2 minutes on each side, or until golden brown.
  6. Serve with blackberries, lemon zest, and maple syrup or your desired toppings!
