Pancake Recipe from Soul Sync Body
Traditional pancakes are usually made with refined flour and sugar,
which have been stripped of some fiber, vitamins, and minerals. Though
there is a time and place for those pancakes, this pancake recipe is one
that can be incorporated into your weekly meals, especially post-workout
with almost 30 grams of high-quality protein. These pancakes can help
keep your energy stable versus the usual energy crash we feel after
refined carbohydrates.
Ingredients
Ingredients:
- 1/2 cup of Cottage Cheese
- 1/2 cup of Oats
- 2 Eggs
- 1 tbsp of Maple Syrup
- 1/4 tsp of Baking Powder
- 1/2 tsp of Cinnamon
- 1 tsp of Coconut Oil
Directions
- In a blender or food processor, blend the oats to
make oat flour.
- Add the cottage cheese, eggs, maple syrup, baking powder,
and cinnamon to the blender or food processor and blend until
well combined. It should be a smooth consistency!
- Heat a non-stick pan or griddle over medium heat
and add 1 tsp coconut oil.
- Pour about 3 tbsp of the batter onto the pan for each
pancake.
- Cook the pancakes for 2 minutes on each side, or
until golden brown.
- Serve with blackberries, lemon zest, and maple syrup or your
desired toppings!
